      Understated power, mineral length and refined texture define By Farr Chardonnay 2025, a serious cool-climate Chardonnay from one of Geelong’s most respected family estates. The wine comes from the same site as the Sangreal Pinot Noir, a vineyard composed of red soil over limestone and planted in 1994. The limestone begins around 20 to 30 centimetres below the surface and extends into the root zone, contributing to the mineral structure that is central to the wine’s identity. The site is a very exposed north-facing slope, giving the fruit concentration while retaining the precision expected from the Moorabool Valley. The Chardonnay vines are planted to a mixture of Dijon clones and Penfolds 58, bringing both finesse and depth to the finished wine. The fruit is hand-picked and whole-bunch pressed in the winery, with all solids collected and chilled before transfer to barrel.

      Fermentation occurs naturally at cool temperatures over one to two months in French oak barrels, of which 30 per cent are new. A small amount of stirring helps initiate malolactic fermentation, adding texture and integration without overwhelming the wine’s natural acidity. The wine is then racked, fined and lightly filtered before bottling 11 months after picking. The 2025 vintage at By Farr was fast and energetic, with Chardonnay harvested early in the main vintage window and the whites carrying higher malic acid than recent years. This gives the wine a detailed, austere edge to balance its richness and fruit concentration. The result is a Chardonnay with fine firmness, mineral drive, integrated oak and impressive length, offering richness of flavour while remaining composed and refined.
