Billecart-Salmon was founded in 1818 following the marriage of Nicolas François Billecart and Elisabeth Salmon. More than two centuries later, the Champagne House remains family owned, with successive generations continuing to shape its distinctive approach from its home in Mareuil-sur-Aÿ.
The Billecart-Salmon style is defined less by power than by precision, freshness and finesse. Careful fruit selection, long maturation and an emphasis on low-temperature vinification help preserve aromatic purity and fine texture across the range, from its non-vintage Champagnes through to its most limited prestige cuvées.
Le Réserve, Le Rosé and the Billecart-Salmon Style
Le Réserve is the foundation of the range, bringing together Pinot Noir, Chardonnay and Meunier in a balanced, elegant expression designed around freshness and consistency. The broader non-vintage collection moves through several distinct interpretations, including Brut Nature and Extra Brut for those seeking a drier style, and Demi-Sec at the richer end of the spectrum.
Billecart-Salmon Le Rosé has become one of the House's defining wines. Chardonnay, Meunier and Pinot Noir are blended with red wine made from Pinot Noir, creating its characteristic pale colour and delicate combination of red berries, citrus and fine mineral freshness.
Together, Le Réserve and Le Rosé provide a clear introduction to the restrained, finely detailed character that runs through the Billecart-Salmon portfolio.
Blanc de Blancs Grand Cru and Le Sous Bois
Le Blanc de Blancs Grand Cru turns the focus entirely to Chardonnay, sourced from Grand Cru vineyards in the Côte des Blancs. The result is a more mineral and finely structured expression, combining citrus and floral notes with chalky freshness and a precise finish.
Le Sous Bois explores a contrasting side of Billecart-Salmon. Vinification in oak brings additional texture, spice and breadth to the traditional Champagne varieties while retaining the freshness that defines the House. It offers a particularly useful point of comparison with the brighter profile of Le Réserve and the Chardonnay-led precision of Blanc de Blancs.
Nicolas François, Elisabeth Salmon and Le Clos Saint-Hilaire
Billecart-Salmon's prestige cuvées honour both the history of the family and the potential of exceptional vineyards and vintages.
Cuvée Nicolas François is named for the House's co-founder and brings together Pinot Noir and Chardonnay in a long-lived vintage Champagne of depth and refinement. Cuvée Elisabeth Salmon is the prestige rosé, produced only in selected vintages and offering a more complex, structured interpretation of the style for which Billecart-Salmon is particularly renowned.
Le Clos Saint-Hilaire is more singular again. This rare Blanc de Noirs is produced entirely from Pinot Noir grown in the enclosed Clos Saint-Hilaire vineyard in Mareuil-sur-Aÿ. Made from a single grape variety, single vineyard and single vintage, it represents one of the most site-specific and limited wines in the Billecart-Salmon collection.
Vintage Champagne, Les Rendez-vous and Collector Releases
Beyond its established cuvées, Billecart-Salmon produces a number of wines that allow a closer look at individual vintages, varieties and winemaking decisions. Vintage releases show the character of a particular harvest, while the Les Rendez-vous series explores more focused expressions of varieties including Pinot Noir and Meunier.
The Kent Street Cellars collection has considerable depth across these releases, including back vintages of Nicolas François and Cuvée Louis, Elisabeth Salmon, Le Clos Saint-Hilaire and limited Les Rendez-vous bottlings.
