Yamazaki Story Of The Distillery Single Malt Japanese Whisky 700ml (2025 Release)

Yamazaki Distillery lies at the foot of Mount Tennozan, where the Katsura, Uji and Kizu rivers converge outside Kyoto. Long celebrated for the quality of its water, the area was chosen by Shinjiro Torii in 1923 as the home of Japan's first malt whisky distillery. Its humid climate and changing seasons would also prove influential in the maturation of whisky.

At the heart of Yamazaki's approach is diversity. Unlike a distillery designed to produce one narrowly defined spirit style, Yamazaki creates an extensive palette of malt whiskies within a single site. Different fermentation vessels, yeast cultures and copper pot stills of varying shapes and sizes allow its distillers to produce spirits ranging from light and delicate to rich and full-bodied.

That diversity continues into maturation. Yamazaki works with an array of cask types, including American oak, Spanish oak and Japanese Mizunara. Each contributes a different dimension: American oak can bring vanilla and sweetness, Spanish oak richer fruit and spice, while Mizunara is particularly prized for the fragrant sandalwood, spice and incense-like character it can develop over extended maturation.

These individual components provide Yamazaki's blenders with an unusually broad vocabulary from which to work. Rather than allowing any single element to dominate, whiskies of different characters and maturation histories are brought together to create the layered, harmonious style for which Yamazaki has become known.

A century after distilling began, Yamazaki remains both the birthplace of Japanese malt whisky and an active centre of experimentation, balancing tradition with a distinctly Japanese pursuit of precision and refinement.
