Rockford Black Sparkling Shiraz - Disgorged 2007

Unlike many of the newcomers, the Rockford Black Sparkling Shiraz uses the time honoured method of ageing quality Shiraz in wood for many years prior to blending and bottle fermentation. The result is softness, depth and complex flavours that are impossible to duplicate in young wines. Sparkling Shiraz made like this is a key-stone of Australia's wine heritage; Black Shiraz ensures that this very Australian wine, nurtured by generations of wine makers is never lost.

The base wine is matured in large old wood for three years before being tiraged, and then left on lees for a year before disgorgement and further cellaring prior to release. This particular bottle was part of the September 2007 disgorgement. The unique personality of Robert O'Callaghan comes rocketing through the newsletter, which at the end of the day is probably the best way of getting hold of these scarce wines.
