Bright, vibrant and unmistakably Japanese, Heiwa Shuzo Tsuru-ume Yuzushu is one of the most celebrated citrus-infused sake liqueurs produced in Japan today. Crafted by Heiwa Shuzo in Wakayama Prefecture, this refreshing expression combines locally grown yuzu juice with a one-year-old Junmai sake, creating a harmonious balance between fruit intensity and sake purity. Unlike many yuzushu that use relatively small amounts of citrus, Tsuru-ume Yuzushu is produced using an exceptional 1:1 ratio of yuzu juice to sake, resulting in remarkable freshness and concentration. The yuzu fruit is pressed together with its peel, allowing the finished liqueur to capture the complete character of the fruit, including its sweet, tart and subtly bitter dimensions. This meticulous approach showcases why Wakayama is regarded as one of Japan's premier yuzu-growing regions. The combination of premium sake and freshly harvested yuzu results in a drink that is both intensely aromatic and exceptionally refreshing. Its naturally balanced profile makes it approachable for newcomers while offering enough depth and authenticity to appeal to seasoned sake enthusiasts. Tsuru-ume Yuzushu has become a benchmark example of premium yuzushu, admired for its purity, vibrancy and unmistakable expression of Japanese citrus.

The aroma is bursting with freshly squeezed yuzu, citrus zest and fragrant citrus oils. On the palate, the liqueur delivers a mouthwatering combination of bright acidity, natural sweetness and refreshing bitterness, creating exceptional balance and drinkability. Despite its sweetness, it remains crisp and energetic rather than cloying, making it equally suitable as an aperitif, digestif or cocktail ingredient. The sake base provides texture and depth while allowing the yuzu fruit to remain the focal point. Best served well chilled, over ice or with soda water, it is a versatile accompaniment to Japanese cuisine, seafood dishes and light desserts. Its freshness, intensity and length of flavour have made it a favourite among bartenders and sake lovers alike.

      Heiwa Shuzō

Founded in 1928, Heiwa Shuzō is based in Kainan, Wakayama Prefecture, on land with a long connection to a former Buddhist temple. Surrounded by mountains and rice fields, the brewery draws on abundant underground water flowing from the Mount Kōya region, an important part of a landscape historically well suited to sake brewing.

Heiwa's history has not been uninterrupted. Brewing was suspended during the Second World War and, in the difficult years that followed, the family worked to secure permission to begin producing sake again. The name Heiwa, meaning ‘peace’, reflects that post-war ambition to return to brewing in more peaceful times.

Today, Heiwa Shuzō is known internationally for its KID sake and Tsuru-Ume fruit liqueurs, alongside an expanding portfolio that includes craft beer and other expressions. Across the range, the brewery remains closely connected to Wakayama, drawing on the region's water, rice-growing traditions and exceptional fruit to create drinks with a clear sense of place.
