Peated whisky gets its distinctive smoky character from the use of peat during the malting process.
When peat is burned to dry malted barley, compounds from the smoke are absorbed by the grain and can remain perceptible through fermentation, distillation and maturation. Islay Whisky

Distilleries including Ardbeg, Laphroaig and Lagavulin have established some of the category's most recognisable smoky styles, often combining peat with maritime, medicinal and coastal characteristics.
Other Islay producers demonstrate that the island is considerably more diverse. Bruichladdich, for example, produces unpeated whisky under its own name while using Port Charlotte and Octomore for its peated expressions.
Bunnahabhain is also particularly associated with an unpeated house style, despite its Islay location.
Ardbeg, Laphroaig & Lagavulin
For drinkers seeking the classic heavily peated Islay profile, Ardbeg, Laphroaig and Lagavulin provide three important reference points.
Ardbeg is known for intensely peated whisky balanced by citrus, spice and sweetness. Its range extends from Ardbeg 10 Year Old through to higher-strength expressions such as Uigeadail and Corryvreckan, alongside limited releases including Scorch.
Laphroaig is particularly distinctive for its medicinal, iodine and maritime character. Beyond the benchmark 10 Year Old, different cask programmes can add another dimension to the distillery's peat, including Sherry and Port-influenced releases.
Lagavulin tends towards a rich, deeply smoky style in which peat can sit alongside dried fruit, sweetness and substantial cask character.
Kilchoman & Modern Islay
Kilchoman offers a more recent chapter in Islay's distilling history.
Founded in 2005, the distillery is notable for its relatively small-scale production and close connection to farming and whisky production on Islay.

What Does PPM Mean in Whisky?
PPM, or parts per million, is commonly used when discussing the phenol content of peated malt.
Higher PPM figures can indicate that the barley was more heavily peated before distillation, but they should not be treated as a direct measurement of how smoky the finished whisky will taste.
Phenols are altered and reduced throughout production and maturation, while different compounds can produce different types of smoky aroma.
For this reason, a higher stated PPM does not automatically mean a whisky will taste proportionally smokier than one with a lower figure.
Peat & Cask Maturation
Peat can interact particularly well with different forms of cask maturation.
Ex-Bourbon casks can bring vanilla, citrus and sweetness alongside smoke, while Sherry casks can introduce dried fruit, spice and richness.
