The first release from Elixir Distillers, Peat, was produced using whiskies from the Scottish island of Islay. A perfect expression of a smokey whisky with all the coastal characteristics one would except from an Islay whisky. Similar to the Full Proof version you will get nots of spice, smoke, and fruit, but with a much more gentler attitude.
The nose begins with rich citrus and soft smoke alongside orange peel and zest blended with thick-cut smoked bacon. This smokiness continues on the palate with smouldering hickory and complex tea notes backed by coal smoke and cast iron stoves. Sweeter notes slowly build with bittersweet dark chocolate and salted caramel. A medium length finish with baked apples and sea spray fading into spice and heavy smoke.
