Yabby Lake Single Vineyard Pinot Noir 2025 is a refined Mornington Peninsula Pinot Noir that reflects the estate’s focus on purity, site expression and careful vineyard work. Yabby Lake describes its philosophy as crafting single vineyard wines of great purity and character, shaped by both the vineyard site and the season in which the fruit was grown. The 2025 season brought a welcome return to warm and extended summer conditions, producing wines with full flavour, intensity and balance. Fruit for this release was handpicked between 20 February and 4 March, with each parcel handled separately in the winery to preserve detail and individuality. The grapes were hand sorted and carefully destemmed before being transferred as whole berries into oak fermentation vats for natural fermentation. A small portion of whole bunches was included in 2025, adding subtle aromatic lift and structural complexity.
Following fermentation, the wine was matured in French 500L oak barrels, 20% of which were new. The wine was left undisturbed until estate bottling in late January 2026, supporting a composed and finely integrated style. The blend is based on Pinot Noir clones MV6, Abel, 667 and D4V2, bringing together perfume, texture, fruit depth and structure. In the glass, it shows bright crimson colour and a lifted red-fruited aromatic profile. The palate is intense and full, with fine-grained silky tannins and layered flavour. This is a polished and age-worthy Pinot Noir that can be enjoyed with roast duck, mushroom dishes, grilled salmon, pork, charcuterie and soft cheeses. With careful cellaring, it is expected to develop gracefully for at least five years and preferably more than ten.
