Yabby Lake Single Vineyard Chardonnay 2025 is a finely poised Mornington Peninsula Chardonnay that reflects the estate’s focus on purity, vineyard expression and careful winemaking. Yabby Lake’s philosophy is to craft single vineyard wines of great purity and character, shaped by both the vineyard site and the season in which the fruit was grown. The 2025 season brought a welcome return to warm and extended summer conditions, producing full-flavoured wines with impressive intensity and balance. This Chardonnay is made from fruit grown at the estate’s Tuerong vineyard on the Mornington Peninsula, a region highly regarded for elegant, cool-climate Chardonnay. The wine is produced from Mendoza and P58 Chardonnay clones, giving a balance of texture, citrus drive, stone fruit and fine mineral detail. Fruit was handpicked and whole-bunch pressed before being transferred to French oak barrels for natural fermentation.
The wine was aged on lees in oak for 10 months before estate bottling in late January 2026, allowing the palate to build texture and complexity. A 20% portion of new French oak brings subtle richness without overwhelming the fruit. The 2025 release shows orchard stone fruit, grapefruit, citrus blossom, roasted almond and a gentle flinty note. The palate is youthful and intensely concentrated, with almond meal and cashew nut elements from barrel fermentation rounding out the fruit. White stone fruit and pithy grapefruit carry through a tightly wound, mineral finish with excellent persistence. This is a precise yet textural Chardonnay that can be enjoyed now or cellared for further complexity. It is well suited to roast chicken, grilled seafood, creamy pasta, lobster, scallops, mushroom dishes and soft cheeses.
