      Killara Distillery is the highly anticipated new distillery from Kristy Booth-Lark, daughter of Aussie whisky guru, Bill Lark. Kristy was previously Head Distiller, and General Manager at Lark. A one woman band and champion of women in distilling, Kristy has also founded the Australian Women in Distilling Association. 

      This 2 year old single malt was distiller before the Killara Distiller building even existed! Bottlings like this one from the beginning days are extremely limited. Aromas of golden syrup, digestive biscuit, and a hint of under-ripe papaya come across the nose. The palate has a very creamy mouthfeel with flavours of caramel, honey and a hint of speculoos. 

      That Boutique-y Whisky Company out Kristy at the front of an Air Traffic Controller seat for this labeling. Despite being around whisky and distillation her whole life, she originally wanted a career in air traffic controlling.
