Founded in 1994 in Hobart, Tasmania, Sullivans Cove Distillery has established itself as a pioneer in the world of single malt whisky. With a focus on creating the finest expressions of Tasmanian whisky, Sullivans Cove has garnered global recognition, including being named World’s Best Whisky three times in 2014, 2018, and 2019. The distillery's success lies in its dedication to small-batch production, using only 100% Tasmanian ingredients and traditional distilling methods.
Operating in one of the most pristine environments for whisky production, Sullivans Cove distillery uses the region’s pure, clean water and fertile barley-growing land to craft its exceptional whiskies. From the unique Tasmanian-built pot still known as "Myrtle" to the bespoke barrel maturation process, every aspect of Sullivans Cove’s production reflects the distillery’s commitment to excellence.
Sullivans Cove is rooted in the belief that whisky should never be rushed. With each cask nurtured to its natural peak, the distillery's philosophy embraces patience, precision, and quality. By using only the finest Tasmanian malted barley and pure local water, Sullivans Cove produces a whisky that is unique to its environment.
The distillery’s commitment to producing world-class whiskies is reflected in its small-batch, single cask approach, where no two batches are the same. This dedication to craftsmanship, paired with the natural elements of Tasmania, allows Sullivans Cove to create whiskies with unparalleled depth and character. Their focus on minimal intervention and maximum expression means each bottle tells a story of its own, embodying the subtleties and complexities of its unique terroir.
The first thing to note from the nose is the wonderful buttery nasal texture, absolutely unctuous! Savoury, fatty, syrupy and briny notes come next (roasted Brazil nuts, maple syrup, pork crackling, miso butter). As the deep savoury notes mingle with boiled lemon lollies, barley sugars and warm apple cider in the mid-section, a beautifully fresh and green herbal layer takes its place amongst the top notes, progressing into a broad and all-encompassing fruit profile of orchard fruits (nashi pear, apple), tropical fruits (kiwi, watermelon), and stone fruits (nectarine, plum, peach). As the nose moves forward, Fruit Tingles join the lemon lolly note along with aloe vera, and a wave of sherbety super-sweet confection (specifically Flying Saucers, a lolly with a crisp wafer outside and sherbet inside).
With a bright and fruit-forward entry to the palate, the spirit opens – thick, juicy and full of watermelon and nashi pear, backed by the firm structure of oak with various subtle confectionary notes. The briny miso note, also spirit-derived, works in tandem with the fruity notes before a wave of chalk love-heart candies and citrus come forward. Next comes a gorgeous nutty depth, enhanced by the earthy and fruity base notes of eucalyptus, spiced mango chutney and biscuity malt - this is a beautifully formed palate with great dimension and structure.
The most beautiful wave of watermelon welcomes the finish, in all its forms! Watermelon taffy, watermelon hard candies and fresh watermelon with the rind. A playful burst of oak spice livens up the back, and at the same time, a flush of mandarin peel and tangerine coats the palate. The texture is thick, and the finish lingers with sweet citrus, the gentle and broad grip of American oak, and the fine tannin of French oak, provide a long-lasting structure.

Maker:
In 1994, on remote island at the far end of the world, a distillery was brought to life from humble beginnings. Away from the whisky establishment, Sullivans Cove were free to explore and perfect their process. Informed by the past and inspired by possible. Bringing a distinctly Tasmanian twist to a whisky craft, shaped by centuries of practice.
20 years later, their commitment to carefully crafting exceptional whisky, inspired by nature and patiently aged, was rewarded when Sullivans Cove was named the World’s Best Whisky. Overnight the secret was out. Special things were quietly happening on this small 'Apple Isle', and whisky lovers globally were intrigued.
In a world of instant gratification and impatient consumption, Sullivans Cove offer an alternative. Genuinely rare whisky which can’t be rushed, and which can never be replicated.
Philosophy:
Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration.
Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good water and good grain is the foundation of all high-end whisky.
100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years.
