Founded in 1994 in Hobart, Tasmania, Sullivans Cove Distillery has established itself as a pioneer in the world of single malt whisky. With a focus on creating the finest expressions of Tasmanian whisky, Sullivans Cove has garnered global recognition, including being named World’s Best Whisky three times in 2014, 2018, and 2019. The distillery's success lies in its dedication to small-batch production, using only 100% Tasmanian ingredients and traditional distilling methods.
Operating in one of the most pristine environments for whisky production, Sullivans Cove distillery uses the region’s pure, clean water and fertile barley-growing land to craft its exceptional whiskies. From the unique Tasmanian-built pot still known as "Myrtle" to the bespoke barrel maturation process, every aspect of Sullivans Cove’s production reflects the distillery’s commitment to excellence.
Sullivans Cove is rooted in the belief that whisky should never be rushed. With each cask nurtured to its natural peak, the distillery's philosophy embraces patience, precision, and quality. By using only the finest Tasmanian malted barley and pure local water, Sullivans Cove produces a whisky that is unique to its environment.
The distillery’s commitment to producing world-class whiskies is reflected in its small-batch, single cask approach, where no two batches are the same. This dedication to craftsmanship, paired with the natural elements of Tasmania, allows Sullivans Cove to create whiskies with unparalleled depth and character. Their focus on minimal intervention and maximum expression means each bottle tells a story of its own, embodying the subtleties and complexities of its unique terroir.
Coconut and Bounty bar notes meld seamlessly with Swiss milk chocolate, creating an indulgent sweetness. Layers of raspberry jam, fig jam, butterscotch, and fruit leather. Sweetness with a touch of saltiness.
The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
An earthy yet vibrant pine forest floor note emerges, punctuated by a burst of Campari-like flavour with more body. The finish is rounded out with rich, browned sugars, evoking sticky date pudding and treacle.

Maker:
In 1994, on a remote island at the far end of the world, a distillery came to life with humble beginnings. Far removed from the traditional whisky establishment, Sullivans Cove had the freedom to explore and perfect its process. Combining centuries-old practices with a distinctly Tasmanian twist, Sullivans Cove honed its craft. Two decades later, their dedication to producing exceptional whisky, inspired by nature and patiently aged, was rewarded when Sullivans Cove was named the World’s Best Whisky. Suddenly, the secret was out: something special was happening on Tasmania's 'Apple Isle,' and whisky lovers around the world took notice.
In a world obsessed with instant gratification, Sullivans Cove offers something different—genuinely rare whisky that cannot be rushed and can never be replicated.
Philosophy:
Distilled in Hobart, Tasmania, Sullivans Cove single malt whisky is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, the distillers aim to create whisky that embodies the sublime. Every cask is nurtured to its natural peak, with thousands of tiny decisions shaping each batch. No two releases are the same, offering a unique opportunity for exploration with each bottle.
Tasmania boasts some of the cleanest water in the world, making it an ideal place for crafting world-class whisky. Combined with some of the best barley-growing land in Australia, the foundation for Sullivans Cove’s premium whisky is second to none.
Sullivans Cove whiskies are made with 100% Tasmanian malted barley, with the wash brewed by local brewers with decades of experience. The whisky is double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, or "wash run," produces low wines of about 20% ABV, which are then redistilled during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being aged in casks.
Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing over many years in Tasmania’s unique climate, typically between nine and eighteen years.
