Distilled in Hobart, Tasmania, Sullivans Cove single malt whisky is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, the distillers aim to create whisky that embodies the sublime. Every cask is nurtured to its natural peak, with thousands of tiny decisions shaping each batch. Tasmania boasts some of the cleanest water in the world, making it an ideal place for crafting world-class whisky. Combined with some of the best barley-growing land in Australia, the foundation for Sullivans Cove’s premium whisky is second to none.
Sullivans Cove whiskies are made with 100% Tasmanian malted barley, with the wash brewed by local brewers with decades of experience. The whisky is double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, or "wash run," produces low wines of about 20% ABV, which are then redistilled during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being aged in casks.
Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing over many years in Tasmania’s unique climate, typically between nine and eighteen years.
Nose - Bounty Bar, Fig Jam, Leather
Coconut and Bounty bar notes meld seamlessly with Swiss milk chocolate, creating an indulgent sweetness. Layers of raspberry jam, fig jam, butterscotch, and fruit leather. Sweetness with a touch of saltiness.
Palate - Golden Raisins, Dried Apple, Sugared Almond
The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.
Finish - Crème Pâtissière, Pine Forest Floor, Date Pudding
An earthy yet vibrant pine forest floor note emerges, punctuated by a burst of Campari-like flavour with more body. The finish is rounded out with rich, browned sugars, evoking sticky date pudding and treacle.
