Second-fill oak, first-class character.
Sullivans Cove Old & Rare TD0095 is a 16-year-old single malt drawn from a 300L second-fill American oak cask, matured from May 2006 to October 2022. With only 409 bottles produced at 46.9% ABV, this release exemplifies the elegance and textural depth that define Sullivans Cove’s most matured whiskies.
Second-fill American oak allows the spirit to lead, and here it shines—bright fruit, florals and honeyed spice flow seamlessly into gentle oak structure and a silky, grounded palate. Layers of peach, citrus, musk and marmalade mingle with nutty undertones, tropical lift and a creamy, tangy finish. It’s a whisky of quiet confidence—built on balance rather than boldness.
Presented in a handcrafted oak box and accompanied by a certificate signed by Distillery Manager Heather Tillott, TD0095 is a true collector’s bottle and a staff favourite for good reason.

Founded in 1994 in Hobart, Tasmania, Sullivans Cove Distillery has established itself as a pioneer in the world of single malt whisky. With a focus on creating the finest expressions of Tasmanian whisky, Sullivans Cove has garnered global recognition, including being named World’s Best Whisky three times in 2014, 2018, and 2019. The distillery's success lies in its dedication to small-batch production, using only 100% Tasmanian ingredients and traditional distilling methods.
Operating in one of the most pristine environments for whisky production, Sullivans Cove distillery uses the region’s pure, clean water and fertile barley-growing land to craft its exceptional whiskies. From the unique Tasmanian-built pot still known as "Myrtle" to the bespoke barrel maturation process, every aspect of Sullivans Cove’s production reflects the distillery’s commitment to excellence.
Sullivans Cove is rooted in the belief that whisky should never be rushed. With each cask nurtured to its natural peak, the distillery's philosophy embraces patience, precision, and quality. By using only the finest Tasmanian malted barley and pure local water, Sullivans Cove produces a whisky that is unique to its environment.
The distillery’s commitment to producing world-class whiskies is reflected in its small-batch, single cask approach, where no two batches are the same. This dedication to craftsmanship, paired with the natural elements of Tasmania, allows Sullivans Cove to create whiskies with unparalleled depth and character. Their focus on minimal intervention and maximum expression means each bottle tells a story of its own, embodying the subtleties and complexities of its unique terroir.
Golden syrup over ripe stone fruit, red apples and sweet spice with an oily richness.
Pink musk, lemon oil, plums and kiwi layered over oak and earthy depth.
Marmalade, demerara sugar and gingerbread taper into lemon curd and yoghurt.
