A compelling Premier Cru Chablis that balances power, precision and terroir clarity, the 2023 Domaine François Raveneau Butteaux Premier Cru Chablis stands as a testament to one of Burgundy’s most respected producers. Butteaux is a steep, limestone-rich slope on the left bank of the Serein, where the Chardonnay vines produce wines of structure, mineral energy and layered fruit intensity. In the 2023 vintage this wine shows remarkable poise, combining vibrant citrus and orchard fruit with saline minerality and chalky tension that carry through the palate with clarity and drive. Raveneau’s meticulous vineyard work and classical winemaking. Hand-harvesting, gentle pressing and thoughtful élevage, allow the terroir to speak clearly, producing a wine that is both expressive and refined. The palate is concentrated yet energetic, with bright acidity framing flavours of white peach, grapefruit and green apple woven with subtle floral and spicy hints. This Premier Cru reveals a fine textural grip and racy backbone that suggest both immediate pleasure and longer-term development in bottle. The finish is persistent and resonant, leaving impressions of mineral depth and citrus lift that evolve with time. Ideal with oysters, grilled scallops or richer seafood dishes, this Chablis is a serious, ageworthy expression of place and pedigree.

“The 2023 Butteaux here was more reserved in personality than any other of the premier crus up until this point, which is certainly not out of character for this cuvée, but which I still take as a good sign for its potential longevity in bottle … excellent core of fruit, fine mineral drive and grip … a very long, racy and promising finish.”
“The delicious 2023 Butteaux from Raveneau boasts pronounced aromas of grapefruit and gooseberry, underpinned with salty minerality. The texture is more linear, as the crisp acidity brings a bit more tension, but there is also more extract here.”
“A fine expression with harmony of white fruit and mineral drive, poised acidity and layered complexity. This wine shows a clear sense of place and the structural precision that defines top Premier Cru Chablis.”
Domaine François Raveneau is one of Chablis’ most revered family domaines, celebrated for producing Chardonnay of extraordinary precision, longevity, and quiet power. Based in the heart of Chablis, the estate has built its reputation on small, meticulously farmed parcels across the region’s most coveted sites, producing wines that are unmistakably mineral, layered, and deeply expressive of place.
Today, the domaine is led by third-generation cousins Isabelle and Maxime Raveneau, with the guidance and continued involvement of their fathers, Bernard and Jean-Marie. Together, they carry forward the legacy established by founder François Raveneau, who shaped the estate’s identity from the 1970s by committing to traditional viticulture, restrained winemaking, and uncompromising standards in the vineyard.
Production remains intentionally limited at around 3,000 cases annually. With holdings spread across Grand Cru, Premier Cru, Village and Petit Chablis sites, every parcel receives the same level of care and attention, a defining principle that underpins the domaine’s global reputation and enduring demand among collectors.
At Domaine François Raveneau, the philosophy is simple and unwavering. If it is not broken, it is not fixed.
The family believes that great wine begins in the vineyard, shaped by hard work rather than intervention. Each plot is farmed traditionally, with manual ploughing to preserve soil vitality, careful yield control through disbudding, and tailored trellising to suit each vineyard’s aspect and exposure. Harvest is carried out by hand to protect fruit integrity and ensure only perfectly balanced grapes reach the cellar.
In the winery, restraint continues to guide every decision. Grapes are pressed immediately after harvest and fermented with indigenous yeasts in stainless steel, allowing purity of fruit and terroir to take centre stage. Maturation takes place largely in older barrels, typically around seven years of age, used not to impart flavour but to build texture and structure over time. New oak is kept to an absolute minimum.
Ageing is patient and deliberate, ranging from just over a year to more than a decade depending on the cuvée. Wines are finished with additional time in stainless steel and, in some cases, extended bottle ageing before release. The result is a collection of wines defined by clarity, balance, and the unmistakable imprint of Chablis’ Kimmeridgian soils.
As Isabelle Raveneau succinctly puts it, the secret is that there is no secret. It starts in the vineyard, and then it is simply hard work.
Pronounced aromas of grapefruit, gooseberry, white peach and apple with hints of chalky stone and faint floral lift, underscored by striking minerality.
Medium to full-bodied with vibrant acidity, layered citrus and orchard fruit, chalky mineral thread and a finely grained texture that builds through the mid-palate.
A sustained finish marked by saline tension, lemon zest and refined acidity that lingers with brightness and finesse.
