Fabien also tends a small number of prestigious Premier and Grand Cru parcels in Puligny-Montrachet and Saint-Aubin, where vine density ranges from 8,000 to 11,000 vines per hectare. These holdings are cultivated with precision and care, using organic practices that encourage biodiversity and healthy soils. Over 60 percent of the domaine’s vines are more than 60 years old, providing fruit with remarkable depth and complexity.
