A sharp, mineral-driven take on Jura’s most ancient white grape. Domaine du Pélican’s 2023 Arbois Savagnin Ouillé is a high-wire act of precision and texture, offering a racy, non-oxidative take on Jura’s most singular white grape. Made from several organically farmed parcels in Arbois and Montigny-lès-Arsures, this cuvée is “ouillé”, topped up during maturation, resulting in a taut, linear wine far from the oxidative styles the region is often known for.

Raised in a combination of foudres and 500L barrels, the wine balances citrus and exotic fruit aromas with electric acidity and fine mineral tension. One-third of the fruit sees a brief skin maceration, adding grip and aromatic depth. This release shows the 2023 vintage’s signature brightness and drive, with remarkable clarity and age-worthy structure.

Savagnin at its most chiselled, this is a compelling wine for those seeking sharp whites with a sense of place. It pairs well with Jura cheeses, smoked trout, or sashimi. Drink now for energy or cellar for more savoury depth.

      Domaine du Pélican

Domaine du Pélican was established in 2012 by Guillaume d’Angerville and François Duvivier, rooted in Montigny-lès-Arsures, a hillside village just north of Arbois, long regarded as the world capital of Trousseau. The domaine began with historic parcels once tended by the Chavanes family, including the revered Grand Curoulet, and has since expanded across 15 hectares in the Arbois appellation. Today, its vineyards hold all five of the Jura’s traditional varieties: Trousseau, Poulsard, Pinot Noir, Savagnin and Chardonnay.

The domaine’s story traces back to a single bottle, Stéphane Tissot’s Chardonnay Arbois Les Bruyères 2005, which left such a mark on Guillaume that he set out to find vineyards in the Jura. His search led him to biodynamically farmed plots at Château Chavanes, untouched parcels once tended by Jean-Marc Brignot, and later to vines acquired from the legendary Jacques Puffeney upon his retirement. With Duvivier guiding the day-to-day, Domaine du Pélican has quickly become a name of weight in the Jura, bringing a Burgundian eye while staying rooted in local sensibility.

      Tasting notes

      NOSE
      Lively and aromatic

Notes of citrus zest, crushed herbs and exotic fruits over wet stone and green almond.

      PALATE
      Tense and textured

Bright acidity cuts through flavours of grapefruit, yuzu, and white tea, framed by a saline grip and subtle tannin from partial skin contact.

      FINISH
      Focused and mineral

Long and dry with lingering notes of lime, flint and a whisper of fennel seed.
