      Domaine 47°N 3°E Petit Chablis 2023 is a dry white Burgundy produced entirely from Chardonnay grown within the Petit Chablis appellation. The wine is made by Guillaume Michaut at his small estate in the village of Beines, in the heart of the Chablis region. The domaine takes its name from the coordinates of Beines - 47 degrees north and 3 degrees east - reflecting Michaut’s preference for placing vineyard origin ahead of the winemaker’s identity. Established independently in 2018, Domaine 47°N 3°E follows a low-intervention approach shaped by organic and biodynamic viticulture. Michaut’s Petit Chablis holdings extend across approximately four hectares, with relatively young vines planted between 2010 and 2020. The vineyards occupy a mosaic of clay-limestone soils and white marl, contributing the mineral definition associated with the cuvée.

      The grapes are harvested at optimum maturity and sorted immediately before pressing. Vinification takes place in an underground cellar, where natural temperature regulation helps maintain controlled and gentle fermentation conditions. The clear juice is fermented in stainless-steel vats using yeasts and bacteria naturally present in the grapes and cellar. The wine then matures on its fine lees for approximately ten months, building texture while preserving freshness and varietal purity. Aromatically, the 2023 release combines white flowers and peach skin with orchard fruit, citrus peel and mineral nuances. The palate is smooth and fleshy yet energetic, with fresh acidity bringing definition to the ripe fruit. A subtle saline quality runs through the wine and provides a clean, chiselled conclusion. With its combination of vibrancy, mineral tension and approachable fruit, this is a distinctive and expressive introduction to Guillaume Michaut’s interpretation of Petit Chablis.

      Domaine 47°N3°E is the result of Guillaume Michaut’s passion for his roots, combined with his vision for a modern approach to winemaking. Located at the crossroads of 47° North and 3° East, Guillaume’s estate is a true reflection of the region’s rich history and terroir. The vineyard, with its family legacy dating back to the 1960s, was originally planted by Guillaume’s grandfather in the village of Beines. His grandfather’s early commitment to quality plantings was instrumental in earning the village its Chablis appellation recognition. Now working on his own since 2018, Guillaume applies his meticulous approach to a small but precious selection of family-owned vines, producing wines that embody both tradition and innovation. His deep connection to the land and respect for its natural rhythms are at the core of every bottle produced at Domaine 47°N3°E.
