Lucien Le Moine is a small House of Grands Crus in Beaune, run by Mounir and Rotem. They established the cellar in 1999, driven by their fascination with the "old way" of growing, vinificating and aging wines. The cellar produces only Grands and Premiers Crus from Côte d'Or, selecting the most beautiful crus in each village and renewing their selection every year. The cellar produces a maximum of 100 barrels (30,000 bottles) to allow them to do everything "by hand" and "by ourselves," which allows them to apply their technical perception and respond to each vintage and wine. Rotem and Mounir Saouma are the owners of the renowned micro-négociant Lucien Le Moine in Beaune, and they have been highly sought-after producers of 1er and Grand Cru Burgundy for several years. Driven by their passion to own their vineyards, they decided to purchase exceptional terroir in Chateauneuf-du-Pape and start Clos Saouma.
Omnia, which in Latin means "All," is a blend of 80% Grenache and 12 other varieties. The grapes come from seven different vineyards across five villages. The grapes are cold-soaked for 7 to 11 days with a mixture of whole bunches and crushed grapes. The fermentation starts naturally and the wine is not pumped over or pigeaged, as Mounir believes that chasing colour is unnecessary. The free run and pressings are separated and aged in a combination of demi-mud (500 litters) that are both new and aged, foudre (2300 litters), cement natural eggs, and cement tanks. The wine is not racked or sulphured for two years during the aging process, resulting in a wine that is pure and unadulterated. Omnia's largest parcel of the blend is sourced from the Pignan commune in Courthezon, which is known to offer the most elegant expression of CNDP, according to Mounir. The grapes from Pignan are then blended with grapes from four other communes in Chateauneuf, including Chateauneuf-du-Pape in the centre, Orange in the north, Bedarrides in the southeast and Sorgues in the south. This meticulous blending process results in a refined and well-balanced wine that showcases the unique characteristics of each commune.
The Clos Saouma 'Omnia' Chateauneuf-du-Pape Rouge 2020 is exquisite, with a captivating texture that complements the layers of cherry puree, steeped plum, and warmed raspberry coulis flavours. These fruit flavours are expertly combined with notes of rooibos tea, bergamot, incense, and jasmine, creating a harmonious and complex taste. The finish is long and impressive, with subtle minerality and remarkable persistence that seems to move with elegance.
