When it comes to white winemaking, Ben employs a meticulous process. The uncrushed white grapes undergo whole-cluster pressing, preserving their aromatic potential. Ambient yeast fermentation takes place in tanks barrels or foudres allowing for a natural expression of the grapes. The wines age for 12 to 22 months, creating a harmonious balance of flavors. Notably, Ben refrains from systematic fining and filtration, allowing the wines to retain their intrinsic qualities. Since 2019, the wines are bottled with Diam corks, ensuring their integrity, while a total sulfur content of 50 to 70ppm preserves their freshness. Depending on the vintage and cuvée, up to 30% of the red grapes undergo fermentation with whole clusters, adding complexity and structure. This high-grown wine is a favourite among followers of this producer. Leroux has been working with the same 0.45 hectares of vines since 2002 (pre-2007, he made it at Comte Armand). Vireuils is an east-facing, late-ripening site, with pure, rocky, limestone and flint soils. Leroux’s vines, around 45 years of age, are situated in Vireuils Dessus—one of the higher sites of Meursault—sitting above the renowned Les Chevalières and Rougeots lieux-dits. In general, this is one of the best areas for village-level wines in Meursault. Aging took place older 300-litre barrels.
The 2021 Meursault Les Vireuils, traditionally from a cold microclimate, somehow managed to still provide 50% of a normal crop.
