Baijiu
Baijiu is a traditional Chinese distilled spirit most commonly produced from sorghum, although other grains may also be used.
Rather than being defined by a single flavour profile, Baijiu encompasses several recognised aroma styles, including sauce, strong, light and rice aroma. Production can involve complex fermentation using qu, followed by distillation, maturation and blending.
Kweichow Moutai is one of the best-known examples of sauce-aroma Baijiu, a style associated with layered savoury, grain, fermented and aromatic character.
Grappa
Grappa is an Italian spirit distilled from grape pomace, the skins, seeds and other grape material remaining after winemaking.
Its character can vary considerably according to grape variety, distillation and maturation. Unaged Grappa tends to emphasise fresh grape and floral character, while wood-aged expressions can develop greater spice, texture and complexity.
Producers such as Nonino have played an important role in establishing premium, varietal and carefully distilled Grappa as a serious spirit category.
Pisco
Pisco is a South American grape spirit with established production traditions in Peru and Chile.
Rather than being made from grape pomace like Grappa, Pisco is distilled from fermented grape juice or wine. Individual styles vary according to origin, grape varieties and production method, with the fruit and aromatic character of the grapes remaining central to the finished spirit.
Cachaça
Cachaça is Brazil's distinctive sugarcane spirit and the traditional base of the Caipirinha.
Unlike rum produced from molasses, Cachaça is made from freshly pressed sugarcane juice. Styles range from fresh, vibrant unaged spirits to expressions matured in wood, including native Brazilian timber.

Slivovitz is a traditional plum spirit with deep roots across Central, Eastern and South-Eastern Europe.

These bottles are best understood through their country of origin, fruit and production tradition rather than attempting to place them within a broader Western spirit style.
Raicilla & Other Regional Spirits
Raicilla is a traditional Mexican agave spirit associated particularly with Jalisco and neighbouring areas.
While related to the broader family of Mexican agave spirits, it has its own protected identity and production traditions distinct from Tequila and Mezcal.
