Australian Cabernet Sauvignon
Australia has a long history with Cabernet Sauvignon, with several regions developing particularly strong identities around the variety.
Margaret River
Margaret River has become one of Australia's defining regions for Cabernet Sauvignon and Cabernet-led blends. Its maritime climate supports a style that combines ripe dark fruit with freshness, fine tannins and savoury complexity.
Producers including Cullen, Moss Wood, Vasse Felix, Leeuwin Estate and Pierro demonstrate different interpretations of the region, from varietal Cabernet Sauvignon to blends incorporating Merlot, Cabernet Franc, Malbec and Petit Verdot.
Coonawarra
Coonawarra has an equally important place in Australian Cabernet, with its famous strip of terra rossa soil and relatively cool growing conditions closely associated with the variety.
Coonawarra Cabernet is often recognised for blackcurrant fruit, fine but persistent tannins and distinctive herbal, mint or eucalyptus notes. Well-structured examples can develop considerable complexity with bottle age.
Yarra Valley & Other Regions
The Yarra Valley offers another expression of Cabernet, often through blends inspired by Bordeaux. Mount Mary Quintet and Yeringberg are longstanding examples, combining Cabernet Sauvignon with other traditional Bordeaux varieties.
Cabernet is also grown across regions including the Barossa Valley, Clare Valley and Great Southern, each bringing different combinations of ripeness, structure and regional character.
Bordeaux Blends
Cabernet Sauvignon is one of the principal red varieties of Bordeaux, alongside Merlot, Cabernet Franc, Petit Verdot and Malbec.
The proportions vary considerably by estate and location. Cabernet Sauvignon is particularly important on Bordeaux's Left Bank, including the Médoc, where it commonly forms the foundation of long-lived blends. Merlot assumes a greater role in many Right Bank wines.

Cabernet Shiraz: An Australian Tradition
Blending Cabernet Sauvignon with Shiraz has a particularly important place in Australian wine history.
The two varieties can be complementary. Cabernet contributes tannin, line and structure, while Shiraz can bring fruit, texture and generosity through the middle palate. Rather than imitating a European model, the blend developed into a distinctly Australian style.
Penfolds Bin 389 is one of its best-known examples, while Yalumba The Signature has a similarly long history. Wines including Yalumba The Caley and Henschke Keyneton Euphonium offer further interpretations of Cabernet and Shiraz within a blend.
Cabernet Beyond Australia
Bordeaux remains the historical reference point for Cabernet-led blends, encompassing everything from approachable regional wines to long-lived classified growths such as Château Latour.
In California's Napa Valley, Cabernet Sauvignon generally takes on greater ripeness and concentration, while wines such as Opus One apply a Bordeaux-inspired blending approach to Napa fruit.
New Zealand also produces notable Cabernet and Merlot-based blends, particularly in Hawke's Bay. Te Mata Coleraine, first produced in the 1980s, has become one of the country's established examples.

Cabernet Sauvignon's combination of tannin, acidity and fruit concentration can give well-made examples considerable capacity to develop in bottle.
With age, youthful black and red fruit can move towards more savoury characteristics such as cedar, tobacco, earth and dried herbs. The length of time a wine will improve depends on producer, vineyard, vintage and storage conditions rather than variety alone.
