Mahi Sauvignon Blanc 2018 is from a combination of parcels located throughout the Marlborough region, selected for their soils, aspect and character.
The natural conditions of high sunshine, cool temperatures, a long ripening period and sheltered valleys provide Marlborough with distinctive grape growing conditions.
The riper hand picked portion of the blend was whole cluster pressed before being taken to both French barriques and tank for fermentation, using predominantly wild yeast. The balance was picked at varying degrees of ripeness depending on flavour and was harvested in the cool mornings to preserve the essence of the variety and vineyards.
