Old-vine Pommard with refinement and lift. Domaine Fabien Coche draws from parcels planted in 1945, 1979 and 1995 across two lieux-dits: La Platière, a premier cru site of chalky limestone-marl with southern exposure, and Les Crenilles, lower-lying with richer brown alluvial soils near the village. The blend brings freshness, minerality, and depth, showing both precision and generosity.
Vinification follows Coche’s restrained approach, with 50 percent whole bunch, gentle extraction through chapeau immergé, and élevage in 30 percent new oak from Damy and Remond for 18 months. The result is a Pommard of aromatic clarity, fine tannins, and layered concentration, carrying the structure of the appellation while leaning towards elegance.
