      Bollinger B16 is a vintage Champagne shaped by the contrasts of the 2016 season, a year that tested the limits of the region and highlighted the resilience of the Maison. Drawn largely from late-ripening Grand and Premier Cru sites in the Montagne de Reims, the wine reflects a blend of approximately 73 percent Pinot Noir and 27 percent Chardonnay, showing a refined tension between depth and clarity. Fermentation in oak barrels and more than seven years on lees give the wine its poised texture and subtle complexity.

      The 2016 growing season moved from cold, wet conditions and spring frosts to an intense late summer, concentrating flavours while reducing yields. Bollinger’s decision to focus on structured Pinot Noir from its strongest terroirs brings definition and drive, supported by Chardonnay that adds lift and detail. Manual riddling and disgorgement preserve the precision of the blend, while the extra brut dosage of 4 g/L maintains transparency and restraint.

      B16 steps away from Bollinger’s more muscular cuvées and leans into purity and finesse. The black and white bottle echoes the vintage’s interplay of delicacy and depth, presenting a Champagne that feels composed, textural and finely etched. It is well suited to dishes that highlight clean lines and gentle richness such as oysters, scallops or lightly poached seafood.
