This reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation. Rooster Rojo Reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Toasty spices rise through blackberry, cooked peppers and exotic citrus. Among green wood there's a little coffee bean, vanilla, popcorn and more earthy caramel and cooked agave.
