Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. Thanks to this, the vine-growers could be sure to have a minimum of harvest every year and so they began to develop stable trade markets.
Defaix’s Chablis Villages is drawn from four parcels of mature, 30-plus-year-old vines situated around Milly and Poinchy, on the left bank of the Serein River. The wine was fermented wild and aged on fine lees for 10 months in glass-lined tanks.
This wine captivates with its vibrant yellow hue and presents a symphony of citrus aromas, ripe apple, and oyster shell nuances on the nose. The palate is met with a perfect blend of minerality and fruit-forward tones, with lemon, grapefruit and a saltiness from the Kimmeridgian clay soils, creating a balanced and elegant structure. Matured in steel tanks to preserve its innate purity, it leaves a lasting, fresh finish. Harmonising beautifully with seafood, this French Chablis is fine-tuned to elevate any dining experience.
The plot is located above Vaillons, and rarely for Petit Chablis, on kimmeridgian soil, in a very stony spot. Attractive mid lemon colour, a stony-style bouquet to the extent of a certain smokiness.
