Barley character and high peat meet restrained cask influence in this Islay single malt. Octomore 16.3 is built from 100% Concerto barley grown on Octomore Farm (Church Field, Islay) and peated to 189.5 PPM, making it the most intensely peated of Series 16. It is matured for five years across bourbon, Sauternes and Pedro Ximénez casks, highlighting the spirit’s structure and terroir rather than heavy cask flavours, and bottled at 61.6 percent ABV, non chill filtered with natural colour.
The nose offers blooming heather, barley sugar, gentle florals and subtle citrus over distant campfire smoke. On the palate, honeyed malt, toasted grain and orchard fruit are threaded with delicate smoke, saline notes and soft vanilla, creating a refined, layered expression despite the high phenol. The finish is medium-length, carrying sweet barley, floral undertones, gentle bonfire smoke and a touch of minerality, ideal alongside roasted game or mature cheeses.
