A refined and textural expression of Premier Cru Chablis from one of Burgundy’s most respected estates, the 2023 Domaine François Raveneau Forêt Premier Cru Chablis offers clarity, energy and nuanced mineral complexity. Sourced from two small parcels at the base of the Forêt slope on deep, limestone-rich soils, the wine embodies the precision and terroir-driven approach that defines Raveneau’s work.
In the glass, it opens with vibrant aromas of grapefruit zest, ripe pear, dried white flowers and subtle quince, framed by the chalky minerality that is synonymous with Chablis. The palate is both deep and lively, with racy acidity providing freshness and structure. Layers of citrus, orchard fruit and saline tension build through the mid-palate, creating a sense of focus and momentum.
Classical winemaking methods including hand harvesting, gentle pressing and careful élevage preserve purity and texture while allowing the site’s character to shine. The finish is long and chalky, leaving a resonant impression of mineral depth and refined acidity that points to excellent ageing potential. Balanced and composed, this Premier Cru is drinking beautifully now yet will reward time in bottle, and pairs seamlessly with oysters, scallops and richer seafood finished with citrus butter sauces.

“Here the 2023 Forêt expresses solid aromas of ripe pear and quince with chalky minerality and floral notes, offering a texture that is deep and driven more by extract than acidity.”
“Sourced from two small plots, this wine soars with grapefruit zest, dried white flowers and pear, showing controlled expressiveness, racy acidity and a long, chalky finish.”
“The 2023 Chablis Forêt has a more mineral-driven bouquet, with flinty scents emerging with time in glass and a beautifully balanced palate showing saline entry, hints of clementine and quince.”
Domaine François Raveneau is one of Chablis’ most revered family domaines, celebrated for producing Chardonnay of extraordinary precision, longevity, and quiet power. Based in the heart of Chablis, the estate has built its reputation on small, meticulously farmed parcels across the region’s most coveted sites, producing wines that are unmistakably mineral, layered, and deeply expressive of place.
Today, the domaine is led by third-generation cousins Isabelle and Maxime Raveneau, with the guidance and continued involvement of their fathers, Bernard and Jean-Marie. Together, they carry forward the legacy established by founder François Raveneau, who shaped the estate’s identity from the 1970s by committing to traditional viticulture, restrained winemaking, and uncompromising standards in the vineyard.
Production remains intentionally limited at around 3,000 cases annually. With holdings spread across Grand Cru, Premier Cru, Village and Petit Chablis sites, every parcel receives the same level of care and attention, a defining principle that underpins the domaine’s global reputation and enduring demand among collectors.
At Domaine François Raveneau, the philosophy is simple and unwavering. If it is not broken, it is not fixed.
The family believes that great wine begins in the vineyard, shaped by hard work rather than intervention. Each plot is farmed traditionally, with manual ploughing to preserve soil vitality, careful yield control through disbudding, and tailored trellising to suit each vineyard’s aspect and exposure. Harvest is carried out by hand to protect fruit integrity and ensure only perfectly balanced grapes reach the cellar.
In the winery, restraint continues to guide every decision. Grapes are pressed immediately after harvest and fermented with indigenous yeasts in stainless steel, allowing purity of fruit and terroir to take centre stage. Maturation takes place largely in older barrels, typically around seven years of age, used not to impart flavour but to build texture and structure over time. New oak is kept to an absolute minimum.
Ageing is patient and deliberate, ranging from just over a year to more than a decade depending on the cuvée. Wines are finished with additional time in stainless steel and, in some cases, extended bottle ageing before release. The result is a collection of wines defined by clarity, balance, and the unmistakable imprint of Chablis’ Kimmeridgian soils.
As Isabelle Raveneau succinctly puts it, the secret is that there is no secret. It starts in the vineyard, and then it is simply hard work.
