The team at Applewood suggest to create the following delicious gin cocktail:

Applewood Orchard
45ml lemon aspen gin
15ml yuzushu
10ml lemon
15ml sugar
1/2 mandarin
3 basil leaves
pinch of black pepper
soda

Muddle mandarin in a cocktail shaker shake all ingredients except soda. double strain into ice filled highball glass. top with soda. garnish with lemon myrtle and cracked pepper.
