Pechuga Mezcal is produced when a finished mezcal is redistilled with grains, nuts, local fruits, and a raw piece of protein (usually chicken) is hung over the still, cooking in the emanating vapours. This style of mezcal is traditionally produced for special occasions and consumed locally. QuiQuiRiQui Pechuga Mole Mezcal is vegetarian-friendly recipe trading the poultry for a homemade mole paste. The final product is a clear liquid. The nose hints of sappy, sweet, rubbery, herbal aromas with a smokey edge. The palate is of char-grilled capsicum, spent pipe tobacco, exotic agave and white pepper flavours. It finish with a lingering wood smoke.
Quiquiriqui Mezcals are all Single Estate (Palenque) handcrafted spirits produced in Mexico. Established in 2011, they partner directly with families who have been producing traditional mezcal in their communities for generations.
Their Mezcals are made to order in small batches using agave plants, picked only when fully mature, then cooked, wild fermented and distilled in alembic 350lts stills using the families time honoured traditional methods.
