Colonel Edmund Haynes Taylor Jr. is a celebrated figure in the whiskey world for fighting in favour of the Bottled-in-Bond Act of 1897 (a whiskey labelled as being “bottled-in-bond” must be distilled at one distillery in a single season, aged in a bonded warehouse for at least four years and bottled at 100 proof). This Act would help to establish a desire for quality among whiskey producers.

Tasting:
Nose - Chocolate, Cherry, Vanilla
Chocolate & molasses. Brown sugar that layers into a sweet silky cherry. Slight spice when you dig through the caramel. Light cinnamon that isn't biting. Vanilla here is sweet... cake or dessert-like. An orange zest and slight tannin forming later in the nose. After sipping, some light oak can be found. No ethanol to be found here, deep inhales are exceptionally sweet & satisfying. The chocolate & molasses sweetness is indomitable.
Palate - Molasses, Apple, Cherry
Explosive candy sweets. Sugary molasses melts into liquid strawberry, apple and cherry. Drinks in a wave from front to back, and lingers most near the very back of the tongue. Some pepper and a hint of deep, dark red grape. A touch of citrus zest and candy.
Finish - Light Tobacco, Dry Leather, Dried Apricots
Vanilla, light tobacco, leather, and white pepper start the finish off, along with a pleasant burn that’s isolated to my mouth only. As the finish goes on and flavors dissipate, a dry leathery flavour dusted with a slight hint of white pepper and dried apricot remains.
