    Camille Giroud, a Swiss wine merchant, marries Miss Deschamps and takes over her family's wine trade firm, which he renames Maison Giroud Deschamps. In 1903, the company becomes known as Camille Giroud and establishes its premises in Beaune. Unlike other wine merchants, Camille only buys musts and finished wines, relying on his talent as a wine maturer to establish the reputation of his company. After Camille's death, his youngest son, Lucien, takes over and maintains the family tradition. In the 1990s, the company faces financial difficulties and Bernard and François Giroud begin to buy grapes instead of purchasing wine. David Croix joins the Maison in 2001, launching new projects and building a new vat house. In 2002, Ann Colgin and other investors take over the company, with David Croix named as Manager in 2007. The Maison remains exclusive and pursues new projects under the leadership of Carel Voorhuis.

    Chardonnay is a grape variety that belongs to the Noiriens family and is a natural descendant of Pinot Noir crossed with Gouais Blanc. Its motherland is Burgundy, where it was identified in Côte-d’Or Beaunois during the Middle Ages. Chardonnay prefers heavy deep clay soils and is highly expressive when planted between Puligny-Montrachet and Chassagne-Montrachet. Over the centuries, growers have selected the best vines, confirming the inseparable trio of grape variety, terroir, and climate. Regional Appellations allow wines to be made from a blend of several locations recognized within the appellation area. Wine merchant-maturers carefully select the best parcels for winemaking according to the vintage. For Bourgogne Blanc, parcels in Clos de la Combe in Puligny-Montrachet, the village of Corpeau, and the Maconnais area have been selected.

    Saint-Romain is an ancient village located in the Côte d'Or region of Burgundy, 13 km southwest of Beaune. It is surrounded by cliffs and rocky spurs and is one of the oldest villages in the area. The vineyard of Saint-Romain is one of the highest in the Côte de Beaune, with an altitude between 280 and 450 meters. The vineyard was established during the Early Jurassic period, taking advantage of the slope and excellent soil. Saint-Romain is one of the first vineyard sanctuaries in Burgundy. The vineyard of Sous le Château is named after its location in relation to the castle of Saint-Romain, which dominates the village from a rocky spur.
