The vineyards range from approximately 200 to 500 metres above sea level and are rooted in a complex mixture of schist, granite and limestone. Cooling winds from Mount Vermio moderate Naoussa’s warm continental climate and help preserve the grape’s naturally vivid acidity and aromatic freshness. The resulting wine captures Xinomavro’s distinctive red-fruited and savoury personality in a lighter, immediately accessible style.\u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested by hand, with approximately 75% destemmed before a 12–15 day maceration. Fermentation takes place in stainless-steel tanks, followed by eight months of maturation in concrete rather than oak, allowing the fruit and regional character to remain clearly defined. Aromatically, the wine shows fresh cherry, strawberry and other red fruits alongside dried herbs and subtle earthy notes. The palate is lively and silky, with bright acidity, fine tannins and a juicy core of red fruit providing energy and balance.
