It is produced entirely from Xinomavro grown in certified-organic vineyards averaging around 45 years of age, with approximately 70% of the fruit sourced from Trilofos and 30% from the higher-altitude vineyards surrounding Fytia. The Trilofos vineyards lie between 150 and 250 metres, while Fytia rises to approximately 450–650 metres, where cooler conditions and greater diurnal variation contribute finesse and freshness. Limestone soils with schist and clay topsoil give the wine structure and distinctive mineral character. The 2023 combines ripe red fruit with the savoury, herbal and earthy complexity that defines high-quality Xinomavro.\u003c\/p\u003e\n\u003cp\u003eAround 60% of the grapes are destemmed before undergoing approximately 40 days of maceration and fermentation with indigenous yeasts. The wine is then matured for 18 months in third-use 500-litre French oak barrels, allowing slow development without overwhelming the character of the fruit. Aromas of strawberry, pomegranate, redcurrant and raspberry mingle with tomato leaf, olive, tea, herbs and subtle spice. The palate is concentrated yet refined, with bright acidity and firm but fine tannins supporting the generous red fruit.
