Harvest began with Cabernet Franc in the second week of September, followed by Cabernet Sauvignon through early October. The resulting wine shows the structure and aromatic definition of Cabernet while retaining the freshness and elegance that distinguish Sassicaia. Its combination of ripe fruit, savoury complexity and polished tannin gives the 2019 considerable depth without heaviness.\u003c\/p\u003e\n\u003cp\u003eThe grapes were carefully selected, gently destemmed and fermented spontaneously in temperature-controlled stainless-steel tanks. Malolactic fermentation also took place in steel before the wine was transferred to French oak barriques for approximately 20 to 25 months. The palate is bright and lifted, with blackcurrant, blackberry and red-plum fruit complemented by cedar, herbs, graphite and subtle spice. Fine-grained tannins provide structure while vivid acidity keeps the wine energetic and precise.
