Ten percent comes from old, non-irrigated vines approximately 38 years of age, adding mature-vine character to the blend. The warm and relatively dry 2024 season brought an earlier harvest, while consistently warm nights allowed the grapes to ripen at comparatively low Baumé. This helped the Holymans retain freshness and keep the finished wine modest in alcohol. The result is a darker, more structured rendition of Stoney Rise Pinot Noir while retaining the energetic, approachable character of the label. \u003c\/p\u003e\n\u003cp\u003eAfter harvest, the fruit underwent a five-day cold soak before spontaneous fermentation with natural yeast. Once fermentation was complete, the wine was basket-pressed into French oak, with most of the maturation taking place in vessels two years old or older, including puncheons and foudre. The restrained use of oak allows the wine's dark cherry, plum, spice and earthy characters to remain prominent. Fine, graphite-like tannins give the palate definition, while fresh acidity keeps the darker fruit profile lively and composed.
