The largest portion comes from Kopuwai, closely followed by Rocky Point, whose steep, free-draining schist soils contribute concentration and mineral definition. The 2025 growing season began cool before warm, dry conditions arrived through January and February, followed by an even and gradual ripening period into autumn. The resulting wine is highly aromatic, combining Poire William pear, white peach and white rose with preserved lemon, cardamom and subtle tropical-fruit notes. Its balance of ripe fruit, freshness and texture gives the wine a generous yet finely structured character.\u003c\/p\u003e\n\u003cp\u003eThe grapes were hand harvested between late March and early April and slowly whole-bunch pressed over five to six hours. Fermentation took place entirely with indigenous wild yeasts in seasoned old barrels, typically proceeding slowly over three to four months. The wine then remained on its gross lees without racking until bottling, building texture and complexity while retaining freshness and aromatic purity. The palate moves through ripe pear, white stone fruit and guava with cardamom spice and preserved-citrus tones, supported by a broad, structured mouthfeel.
