The fifth sweet Riesling produced from the site, it combines concentrated fruit and generous sweetness with the bright acidity of cool-climate Tasmania.\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003eThe canes were cut in late March to concentrate the fruit before it was hand-picked at 16.5 Baumé. Whole bunches were pressed to tank, with the juice returned to the skins for 24 hours before pressing again. The process was repeated across three press cycles to extract sugars and flavour, followed by five months on lees prior to bottling.\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003eJasmine, honeysuckle and citrus blossom lead into caramelised apricot and lime peel, while the palate brings lime, orange pith and almond to the wine's concentrated sweetness. At 142 g\/L residual sugar, it is rich and luscious, yet 7.8 g\/L of acidity provides the freshness and definition to keep everything beautifully balanced.
