The wine was produced only because the quality and flavour definition of the 2008 vintage were considered worthy of Special Bin status. Cabernet brings structure and definition while Shiraz contributes richness, texture and fruit weight, creating a distinctly Australian interpretation of the classic blend. The wine shows deep red colour, considerable concentration and a complex combination of red fruit, savoury spice and dark secondary notes. Its balance of intensity, fine tannin and bright Coonawarra acidity gives it the structure for extended bottle development.\u003c\/p\u003e\n\u003cp\u003eFermentation incorporated Magill open fermenters and Nuriootpa static fermenters, followed by basket and membrane pressing and barrel fermentation. The wine was matured entirely in new oak hogsheads, divided between 57% French oak and 43% American oak. Aromatically it moves through red liquorice, black olive, quince, beetroot and spice, with star anise and savoury nuances adding complexity. The palate is seamless and tightly focused, combining cola, sarsaparilla and white-chocolate characters with fine persistent tannins and vivid acidity.
