Patrick Piuze vinifies this Premier Cru separately to preserve the identity of the site rather than blending it into a broader Chablis cuvée. The 2023 Montmains was fermented and matured in neutral French oak, allowing texture to develop without dominating the Chardonnay with new-oak flavour.
