At approximately 100 metres elevation, these low-yielding vineyards produce concentrated fruit while retaining the freshness that defines well-made Savatiano. The 2025 shows the variety’s characteristic combination of citrus, orchard fruit, delicate floral character and subtle herbal tones. Its restrained aromatics and mineral freshness make it a clear expression of both the grape and its Attican origin.\u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested around mid-September and fermented in stainless-steel vats at controlled temperatures between 16°C and 18°C. The palate is medium-bodied and finely textured, with citrus, green and white fruit supported by pleasant acidity and a subtle chalky quality. A lightly saline, mineral element carries through the wine and contributes definition to the long, clean finish.
