Good soil moisture and the absence of prolonged extreme heat allowed the fruit to ripen steadily, with harvest taking place around the beginning of March at moderate sugar levels. All fruit was hand-picked and carefully sorted before being whole-bunch pressed, preserving freshness and purity from the outset. Fermentation began after clarification and was completed in 228-litre French oak barriques, 48% of which were new. The resulting Chardonnay captures the richness associated with Moss Wood while retaining freshness, precision and composure.\u003c\/p\u003e\n\u003cp\u003eThe wine completed full malolactic fermentation and remained in French oak for approximately 18 months before blending and bottling. White peach, nectarine, lime and grapefruit provide a bright fruit core, complemented by cashew, roasted almond, nougat and restrained toasted-oak complexity. The palate is full-bodied and concentrated, yet fresh acidity keeps the generous stone-fruit flavours lively and well defined. Citrus notes add further lift through the middle palate while subtle nutty and savoury characters contribute texture and depth. It’s a thoroughly impressive wine, flavourtown, but balanced and tight.
