The vineyard sits on fine Maslin sands over a layer of ironstone pebbles and is exposed to cooling south-westerly sea breezes, conditions that contribute perfume, freshness and structure to the wine. The 2025 growing season benefited from good winter rainfall, mild spring conditions and even flowering, followed by a slightly warmer-than-average summer without prolonged heat. A warm and dry finish to the season allowed the fruit to ripen cleanly and evenly. The resulting wine combines concentration and intensity with the bright acidity and saline character associated with the site.\u003c\/p\u003e\n\u003cp\u003eA combination of whole-bunch-pressed and crushed fruit was fermented in old oak and concrete before maturation in old French oak puncheons. Time on lees and malolactic fermentation added texture while retaining the wine's natural freshness and mineral tension. Aromatically, the wine shows honeysuckle and fresh quince, with citrus and orchard-fruit characters developing through the palate. Citrus pith, ripe grapefruit and subtle waxy notes are supported by phenolic grip, bright acidity and a distinctive sea-spray salinity. There’s a juiciness to this wine, as mentioned, but it feels dry through the back half, almost pebbly, with an itch of grip there too. It’s calm and balanced, again a nutty and quiet saline character in a green olive sort of way, a fine chalky and dusty grip, closing with a cool finish of excellent length and a cinch of lemon peel.
