The vineyard lies on ancient slate and siltstone soils interspersed with quartz and ironstone, providing a lean environment that helps control vigour and preserve concentration. Picpoul is naturally late ripening and retains pronounced acidity even through warm growing conditions, making it particularly well suited to the region. After fermentation, the wine remained on fine lees for around five months, developing additional mid-palate texture and a gentle creamy quality.
