While Hobart Whisky typically marries whisky from multiple casks to achieve balance, depth and complexity, certain casks develop such remarkable individuality that they deserve to be bottled independently. Cask 80.38 is one such example. Filled on 2 September 2020 and bottled on 17 September 2026, this single malt spent six years maturing in American oak, developing an intricate balance of vibrant orchard fruit, honeyed sweetness, creamy confectionery and delicate savoury undertones. Bottled at a formidable 64.1% ABV, without dilution, this exclusive release yielded just 83 bottles, offering a rare opportunity to experience the distinctive personality of a single Tasmanian whisky cask in its purest expression.

The American oak maturation brings an inviting aromatic profile, opening with crisp red apple, golden honeycomb and soft nougat, complemented by the comforting warmth of lightly smoked fruit cobbler and an intriguing savoury suggestion of green tomato. Despite its considerable strength, the palate begins with a remarkably clean, light character before developing a rich, creamy texture that carries layers of toffee apple, vanilla and roasted nuts. Vibrant berry confectionery introduces a playful sweetness, while gentle spice and bright lemon meringue provide contrast and complexity. The finish reveals a lively interplay of bittersweet marmalade and tart kiwi fruit, gradually evolving into toasted coconut, dark chocolate and a delicate whisper of earthy smoke. Expressive, beautifully structured and wonderfully individual, this limited single-cask release rewards slow appreciation, whether enjoyed neat to experience its full intensity or with a few drops of water to explore its evolving layers of fruit, oak and confectionery.

Tasting Notes

NOSE – Bright, honeyed and delicately smoky Crisp red apple and golden honeycomb mingle with soft nougat and lightly smoked fruit cobbler, accompanied by a subtle savoury hint of green tomato.

PALATE – Creamy, vibrant and beautifully layered A clean, light entry develops into a rich, creamy mid-palate, revealing toffee apple, vanilla and roasted nuts alongside sweet berry confectionery, gentle spice and zesty lemon meringue.

FINISH – Lively, complex and subtly smoky Bittersweet marmalade and tart kiwi fruit bring refreshing brightness, gradually giving way to toasted coconut, dark chocolate and a delicate trace of earthy smoke.

Finer Details:
Brand - Hobart Whisky
Style - Single Malt Whisky
Country - Australia
Region - Tasmania
ABV - 64.1%
Size - 500ml
Age - 6 Years
Batch - 26-002
Cask Type - American Oak
Cask Filled - 2 September 2020
Bottled - 17 September 2026
Cask Strength - Yes

//cdn.shopify.com/s/files/1/0043/9258/3217/files/669ccf63-d60a-4907-87b5-a982761c7599.webp?v=1792544112
https://kentstreetcellars.com.au/products/hobart-whisky-american-oak-single-cask-8038-cask-strength-single-malt-whisky-500ml
