Around 10% whole bunches are retained during fermentation to bring aromatic lift and additional savoury complexity. Aromatically, the wine combines raspberry, wild strawberry, damson plum and blueberry with pepper, baking spice, dried herbs and subtle savoury notes. The palate remains juicy and energetic, supported by fine tannins and fresh sour-cherry acidity that give the wine definition and persistence.
