    Specialising in Chardonnay and Pinot Noir, Giant Steps explore site, micro climatic and clonal differences between several specialized vineyards in the Yarra Valley including their own multi-clonal vineyard and the highly regarded Tarraford vineyard. Focused intently upon reflecting the individual and unique characteristics of each single vineyard, Giant Steps adopts a minimalist approach to winemaking including, whenever possible, vinification using indigenous yeasts and gravity flow transfers.

    Applejack Vineyard, in the upper Yarra Valley, was planted by respected viticulturist Ray Guerin and is managed by his son Mark. The higher altitude results in a cooler and extended growing season, ideally suited to Pinot Noir and Chardonnay (3-4 weeks later than central Yarra valley). Applejack Vineyard is located on a dramatic slope and is close planted and fastidiously managed. The basalt based underlying volcanic soil and rock produce a characteristically fine yet extended, spicy and firm palate.

    The 2021 Applejack Vineyard Chardonnay has a wonderful influence of florals, pear, red apple and musk. On the palate is preserved lemon, crushed nuts and more orchard fruit. A great wine that will continue to get better with careful cellaring. 

    The 2021 Giant Steps single vineyard chardonnays mean business. They have the reserve of the confident. This seemed yet more reserved than the Sexton, which itself was more reserved than the Tarraford, and yet like them both it feels commanding. Stones, green pineapple, musk and poached red apple flavours, almost and pretty much effectively into quince, with grippy texture even as it pushes (confidently) through the finish. There is the influence of florals here, the influence of pear, the influence of crushed woodsy spices. This needs time but wow what a wine. - Campbell Mattinson, The Wine Front, 95 Points
