The blend comprises 90% Assyrtiko, 5% Aidani and 5% Athiri, combining Assyrtiko’s powerful acidity with additional aromatic complexity from the traditional supporting varieties. Fruit comes from Santorini’s old, ungrafted vines growing in the island’s porous, nutrient-poor volcanic soils. After harvest, the grapes are dried for up to ten days, spending part of that period in direct sunlight and part in the shade to concentrate sugars and flavours while preserving freshness. The resulting wine combines exceptional richness with the naturally firm acidity that characterises Santorini Assyrtiko.\u003c\/p\u003e\n\u003cp\u003eFollowing the drying period, the concentrated grapes are pressed and the wine undergoes fermentation before extended maturation in seasoned oak barrels. Its long ageing develops a deep amber colour and a dense, lightly syrupy texture while building layers of dried fruit, caramel, coffee and warming spice. Aromas and flavours of dried figs, apricots, plums and raisins mingle with vanilla, nutmeg and cinnamon. Despite its considerable sweetness and concentration, vibrant acidity prevents the palate from becoming heavy or cloying and gives the wine remarkable balance.
