These harsh conditions, combined with very low yields, help produce Assyrtiko with concentration, naturally vivid acidity and the distinctive saline mineral character associated with Santorini. Thalassitis is one of Gaia’s flagship expressions of the variety, intended to show Assyrtiko without the influence of oak.
