The project began with clonal selection in 2004, eventually focusing on the 001VNB Agiorgitiko clone planted in the estate vineyard in 2014. For the 2022 vintage, Agiorgitiko accounts for 70% of the blend, complemented by 30% Vertzami, a rare variety that contributes additional tannin, spice and phenolic intensity. The vineyard lies at approximately 450–550 metres elevation on strongly sloping, south-southwest-facing terrain with shallow clay over limestone soils. Low yields and the cooler conditions of this semi-mountainous site help produce a concentrated wine with freshness, structure and an expressive aromatic profile.\u003c\/p\u003e\n\u003cp\u003eThe 2022 Optimus was matured for approximately 18 months in oak, developing depth and complexity while retaining the fruit and character of its two indigenous Greek varieties. The wine shows a deep ruby colour with concentrated aromas of black and red fruits, plum and violet, accompanied by cocoa, pepper and other savoury spices. On the palate it is full-bodied and richly textured, with ripe, juicy tannins balanced by fresh acidity. Vertzami adds extra structure, peppery spice and energy, while Agiorgitiko provides the wine’s velvety texture and generous fruit core.
